Congrats!! 500 cal is very hard. I had to go on a hypo allergenic diet about a year ago, I lost 20 lbs in 25 days!! I didn't count calories but cut out all allergins ~ it maybe eaiser. Allergin food list is NO : wheat, corn, eggs, peanuts, shell fish, milk (dairy), soy and any thing they make (like corn syrup) I ate lots of rice and chicken, salad, rice noodles, oatmeal with honey, it was hard but to lose a pound a day was nice, lol! Good luck!!
