The key to finding a good fish is to look at the eyes and see if it's cloudy or clear, clear means fresh! Also the underside gills must be red not brown, Phooka the fish is Pomfret, my fav, the rub is simple chilli powder, cumin, tumeric, salt, and corriander powder
