It's a Filipino rice noodle dish. One of my good friends introduced me to it. Super easy and tasty.

Looks nice and light. I like Thai and Vietnamese noodle salads, which look similar.

I made it, you can get rice noodles at any grocery store. You just soak them in warm water until they are soft - about a half hour. Then throw them in a skillet with veggies, garlic, a dash of soy, lemon, and chicken if you eat meat.

Glen, I would imagine the noodles are not great carb wise. I only made this because I was running a long distance.

If you Google rice noodles VS pasta there is not a lot of difference calorie and fat, carb wise. Regular pasta has the advantage of having more nutritional value because of B vitamins and protein. But, I love rice and glass noodles.

if yall are going to be noodle nazis, try out chickpea pasta. 34g carbs but 12g protien and 7g fiber

I love noodles of all kinds. My neighbor who is East Indian makes a noodle out of chickpeas— not sure how because I have not had the opportunity to watch her do it but they are sure good.
